Do you have tomatoes and eggs at home? A comforting and hearty breakfast recipe that features creamy scrambled eggs, tomatoes, and a touch of smoky spinach. All the flavors are well-balanced, making it an easy and satisfying breakfast option!
Breakfast with eggs, tomatoes and spinach step-by-step recipe:
Ingredients:
1 tomato
5 eggs
120 ml of cream
50 grams of parmesan cheese
50 grams of gouda (or 3 slices)
200-250 grams of spinach
Smoked paprika
Frying oil, olive oil
Salt and pepper
Step 1
Cut one tomato into circles, then fry it in frying oil
Step 2
While the tomatoes are frying, prepare the egg mixture. Crack three eggs into a deep bowl and slowly pour in 70ml cream. The cream and eggs should preferably be at room temperature. Season with salt and pepper to your taste and whisk until smooth. Pour the mixture to the pan with tomatoes.
Step 3
Grate the Parmesan directly into the pan or sprinkle with pre-grated cheese. Put the gouda slices on top. Cook for 6-7 minutes under the lid.

While the egg mixture is cooking, prepare the spinach.
Fry half of the spinach in a frying pan - we're gonna make spinach "chips". Put the another half in a food bag, season with sal, pepper and smoked paprika (1 tablespoon will be enough). Add 1,5 tablespoon of olive oil in the bag and shake the bag well to allow the spinach to mix with the seasonings.
Line the bottom of the baking tray with baking parchment. Place the spinach on it and bake in the oven for 12 minutes (350F or 180C).
Step 5
While the half of spinach is baking, let's make a spinach-egg mixture - it is final step.
Crack 3 eggs, add 50 ml of cream, fried spinach from the pan, season with salt and pepper to your taste and mix all the ingredients with blender. By this time, the egg base and tomatoes should be ready. Lift the lid, pour in the spinach mixture. Fry for 7 minutes under the lid.
Place the cooked omelet on a plate, in a separate one - take the spinach "chips" out of the oven - the spinach leaves should be brittle.
